Ingredients
- The bread
- 3 cups whole-wheat flour · ¼ cup sunflower oil
- 1 cup water · ¼ tsp salt
- The mash
- ½ cup melted butter or ghee
- 1 tsp ground cardamom · ½ cup honey
- 5 dates, pitted
- A piece of honeycomb, optional · roasted nuts, optional
Method
- Mix the flour, salt and oil, add the water gradually, and knead into a dough; rest 30 minutes.
- Press to about 1 cm on a greased sheet and bake at 400°F until golden, 10–20 minutes.
- While still warm, chop or grind the bread into small pieces.
- Work the melted ghee thoroughly through the bread — ‘areeka’ comes from the word for kneading.
- Add the cardamom, honey and dates and mash until soft and cohesive.
- Mound onto a plate, crown with honeycomb, and serve warm with Saudi coffee.
The family table
The pride of Asir and the south, where honey is a way of life and the bread is brown wheat, not the white loaves of the Najd. In Jeddah, areeka shops sit beside masoub shops — the date sibling and the banana sibling of the same warm-mash family. Some city versions add cream or a sprinkle of nuts; the honeycomb is the traditional flourish.
