Ingredients

  • 1 cup basmati rice, rinsed
  • ¼ cup date molasses (dibs)
  • ¼ tsp saffron, ground · 1 tsp rose water
  • ¾ tsp cardamom, freshly ground
  • 4 tbsp butter or ghee — generous, for the crust
  • Sea salt · fried or grilled fish, to serve

Method

  1. Bloom the saffron in the rose water.
  2. Par-boil the rice in salted water exactly 8 minutes; drain.
  3. Toss the hot rice with the date molasses, cardamom and saffron-rose water.
  4. Melt the butter in a heavy pot (cast iron if you have it); press in a layer of rice to start the crust, then pile the rest loosely.
  5. Poke steam holes, seal the lid, and steam on the lowest heat 20–25 minutes — trust your nose on the crust.
  6. Dip the pot base in cold water for thirty seconds, invert onto a platter, and scatter any stuck golden crust on top.

The family table

Muhammar is Bahraini at heart — this book says so plainly — and beloved across the Gulf, Kuwait included, where sweet rice against salty fried fish (safi or kingfish, if you can get them) is the whole point. Bahraini households split between date-molasses and caramelized-sugar schools; the buttery crust is common law.
