Ingredients
- 1 cup flour
- ½ cup ghee — firm, not melted; butter will betray you
- ½ cup icing sugar
- ½ tsp rose water (optional)
- Pistachios, one per cookie
Method
- Cream the ghee and icing sugar until pale and fluffy.
- Add the rose water, then fold in the flour just until it comes together — overworking toughens them.
- Chill the dough 30 minutes.
- Roll small balls, flatten slightly, and press a pistachio into each heart.
- Bake at 300°F for 12–15 minutes — no browning; pale is done.
- Cool completely on the tray before touching: they’re fragile warm, magnificent by tomorrow. Keep weeks in a tin.
The family table
The whole Arab world claims ghraybah, and every table from Cairo to Kuwait sets it out for Eid — remember the ratio, 2 parts flour to 1 each of ghee and sugar, and you’ll never need the book. Ghee is non-negotiable: butter’s water wakes the gluten and the melt is gone. Golden ghraybah is overbaked ghraybah.
