Ingredients

  • 450–500 g pumpkin, peeled and cubed
  • ½ cup whole-wheat flour
  • ½ cup honey or sugar — or date syrup, the Kuwaiti way
  • ½ tsp ground cardamom · a fat pinch of saffron threads
  • 1 tbsp rose water
  • 2–3 tbsp ghee, plus more to glaze
  • Pistachios or a drizzle of date syrup, to serve

Method

  1. Boil the pumpkin 15–20 minutes until completely soft; drain and mash smooth.
  2. Dry-roast the flour on low, stirring constantly, until pale gold and nutty — unroasted flour tastes raw, and there’s no fixing it later.
  3. Sweeten the purée and stir in the cardamom, saffron and rose water.
  4. Over medium-low heat, add the roasted flour spoon by spoon, stirring out lumps.
  5. Stir until it gathers into a thick, glossy mass; work in the ghee.
  6. Serve warm in small bowls with a well of melted ghee in the center, date syrup and pistachios over.

The family table

Aseeda is the Gulf’s warm flour-sweet family — postpartum food, winter food, gathering food — and the pumpkin version (bobar) is its gentlest member, eaten across Kuwait and the Emirates. The Kuwaiti date aseeda is the same craft with dates for sweetness. The well of ghee in the middle is tradition, not decoration.
